FG, your tomatoes sound like Roma or similar "pear" tomatoes....very good canning as juice or sauce.
If I'd had some home canned tomato sauce the zuchinni lasagna Mrs. T baked yesterday would have been competely "off the land" except for the cheese. Tomato and pepper home grown, as were the basil, oregano, and parsely; as was the venison burger mixed through.
Disclaimer: I didn't shoot the deer but I helped to butcher it.

My tomatoes aren't roma or pear tomatoes but oval cherry tomatoes. I've grown to love them now and am having to give away so many because there are zillions more coming along. The regular size tomatoes are coming in now and at a manageable pace and they are super good.
