We live in a time in which decent and otherwise sensible people are surrendering too easily to the hectoring of morons or extremists.

Without the cheese?!     There is a time to reduce calories, and french onion soup ain't it. Besides, after a few bottles -er- glasses of that brooding Bordeaux, calories scmalories.

Wishing I had a pot of it brewing on the stove right now.  But no cheese?  No chance.  All that great broth and great veggie definitely requires a cheesey state of mind.

It reminds me of the time I saw "Low Fat Fettuccine Alfredo" on a menu.
Hey, you can either have a low fat meal, OR you can have fettuccine alfredo.
You can't have both.

Amen brother.

If you don't want the fat, don't eat the alfredo.  It's just not right.

Roosvelt Tavern serves an excellent French onion soup.  I was there last week for lunch but decided on something else.

Speaking of Roosevelt Tavern, if calories are not a concern, their Cream of Crab Soup with a drizzle of sherry is famous.

screw calories... enjoy the "forbidden" stuff as a monthly treat and you won't feel so bad...
or as my Bob says "I did 4 miles on the treadmill today... I can eat that ice cream sandwich"!!

I've made a variation during Lent substituting vegetable stock for beef stock.  I did use some beef bullion for darkening.

Vidalia onions slow cooked for 8 -10 hours----wonderful!
