Chum salmon are slim and elongated and may reach about ten pounds. During the spawn the fish develop elongated teeth and are known by the common name “dog salmon”. Chum salmon are commercially fished from Oregon to Alaska. You may see them on the market under the label “Keta”. The flavor varies considerably depending on where they were caught.  Chum salmon caught in the ocean are considered at their best in flavor.
