y'all need to git urselfs some possums!!!  they eat all those damn ticks!!!  I have one under my house that had little critters and they eat ticks too!!!

At home with my husband Bob, hoping it will be a calmer day than what we've had for the last 3 years dealing with the destructive effects of dementia/alzheimer's wreaking havoc on my mom, and then us, of course...
I will make a favorite food for her besides regular celebratory steak, potato salad, etc...

I love to butterfly those 3 foot long loins to roast them like pernil... but what I do is cut them in half crosswise, and then butterfly each one... I cut it like the article mentions, but then I cut each side until flat, then I put my seasonings over the whole thing and roll them up, tie them like porchetta, and set them in the oven overnight at 200 degrees... when I wake up the next day, I raise the temp between 375-425 for about 15 minutes and that makes them beautiful... after they rest, I slice them, arrange them on a long platter, and spoon some chimichurri straight down the middle.... mmmmmmmmmm
